Mango & passion fruit compote Mango puree 75g Passionfruit puree 40g Sugar 15g Cornstarch 1g Water 5g Lemon juice 5g Passionfruit gelee Passion Fruit puree 180g Sugar 50g Agar agar 2g 1/4 Gelatin sheet (0.5g) *Used 30cm X 21cm pan for the gelee. *It can be challenging to lift the gelee from the tray. If you're struggling, you can freeze the gelee, then cut and transfer it to the cake Cookie base Powdered 50g Unsalted butter 100g (Room temperature) Egg 20g Vanilla extract 3g Salt 1g All-purpose flour 150g *Bake at 350F for about 15 minutes.
