Malvani Chicken Gravy
For The Marination
1 kg chicken ( cut in medium sized pieces)
1 tbsp green vatan ( 3 green chillies, 6 garlic flakes, 1 inch ginger, 1/4 cup kothmir ground to a fine paste)
2 tsp coriander powder
1 tsp cumin powder
1 tbsp Malvani masala
Salt to taste
1/2 tsp turmeric powder
Marinate the chicken for 30 minutes

Wet Masala (ola vatan)
2 sliced onions
1 grated coconut
7-8 garlic flakes
2 star anise
1 small piece nutmeg
2 inch cinnamon
6 cloves
2 badi elaichi
4-5 cardamoms
1 mace
Roast the onions, coconut and garlic in 2 tbsp oil till brown as shown in the video. Also roast the whole spices. Cool the masala and using little water, grind it to a smooth paste.

For The Gravy
2 finely chopped onions
2 tsp ginger garlic paste
1 tbsp Malvani masala
Oil as required
Heat 3 tbsp oil in a pan and add the finely chopped onions . Fry the onions till they turn pink . Add the ginger garlic paste and sauté for 2-3 minutes.
Add the marinated chicken and sauté on a high flame for 3-4 minutes. Cover the pan and cook the chicken in its own juices for 10 minutes, stirring in between. Add the ground masala and the Malvani masala powder and sauté the chicken for 3-4 minutes till the oil separates. Add 2-3 cups of water and cover the pan and cook for another 20 minutes. Garnish with freshly cut coriander leaves. Enjoy.
