Birria Tacos Recipe, Two Ways:

Simple Birria Recipe
For the Meat broth:
4kgs of Beef Chamberete (with) bones.
1 Onion
5 cloves of Garlic
Thyme
Bay Leaf
Marjorine
Black pepper
Water

For the Salsa:
12 chiles guajillo
3 anchos chiles
2 pasilla chiles
Onion
Garlic
Water

For the Sides:
Cilantro
1 white Onion
Oregano
Tortillas

Procedure:
1. For the meat broth, boil everything together in a pressure pot for 1 hour, take out the meat and shred, reserve, strain the broth, reserve
2. For the salsa, remove the veins, stem, and seeds from the chiles and boil them for 10 minutes with enough water, then blend and strain, reserve
3. Serve broth with meat on a side and all the other sides, make tacos and enjoy!

Ultimate Quesa Birria Tacos Recipe
For the Adobo:
1 ½ kg Beef
6 Guajillo chiles
2 Chiles morita
1 Chile pasilla
3 Bay leafs
1 small Cinnamon stick
2 cloves of Garlic
5 Allspice
1/4 cup White Vinegar
1 tsp Cumin
1 small Avocado leaf
½ tsp Oregano

For the Consommé:
5 tomatoes
1/2 onion
1/2 garlic head

For the Spicy radish pico:
Radish
Lime
Vinegar
Oregano
Habanero

For the Quesabirrias:
Corn Tortilla
Quesillo Cheese
Birrie Meat

For the Sides:
Orégano
Onion
Cilantro
Spicy radish pico.

Procedure:
1. For the adobo, fry chiles and avocado leaves then boil them for 10 minutes. Roast all the other spices and blend everything very well and strain, marinate the meat for 1 night
2. For the spicy radish pico, chop radish, blend habanero with lime juice and vinegar, mix with radishes and leave it to rest for the night
3. Roast with a bit of oil the tomatoes, onion, and garlic, then blend and strain, reserve.
4. Put marinated meat with the roasted tomatoes to boil until the meat is tender.
5. Make Quesabirrias as shown in the video
6. Serve birria and quesabirrias with the sides, enjoy!
