It's definitely still soup season and I love this simple, economical and versatile recipe.  It's a hearty vegetable soup and you can make it with Pasta or Rice, adjusting the ingredients to what you have on hand.  Perfect for a chilly, late winter afternoon.  Tutti a Tavola a Mangiare!
