Persian Celery Stew~Karafs Khoresht

I hope you enjoy this delicious and hearty stew comprised of immune boosting nutrients like Celery, onions, garlic, and protein. It can be enjoyed by itself or poured over a bed of fluffy buttery rice. Either way, your home will be infused with that traditional Persian aroma of comfort food home cooking. Ingredients: 3 Stalks of Celery- chopped 1 bunch fresh Cilantro- chopped 1 Onion- chopped 3 Cloves minced Garlic 1-2 cups of Diced Beef, Lamb, or Chicken 1 Tablespoon Turmeric 2 Tablespoons Dried Mint 1/2 Tablespoon Dried Dill 1/2 Tablespoon Garlic Powder 1/2 Tablespoon Onion Powder 1/2 Tablespoon Curry 1/2 Tablespoon Aleppo Pepper Salt and Ground Pepper to taste 3-4 cups Basmati rice Olive Oil Preparation: Bring with saucepan with oil to medium heat and begin to sauté the onions until they are translucent and semi golden, then add the minced garlic and shortly after the diced beef. Cook until the beef is browned on all sides. Begin adding in the spices, such as the Turmeric, Garlic Powder, Curry Powder, Ground Pepper, and Salt to taste. Continue the sauté until beef is cooked and then add about 6 cups of water and let simmer to boil and set aside. In a separate saucepan bring oil to medium heat and add the chopped celery and sauté adding the fresh cilantro once the celery is semi tender. Continue by adding in the dry herbs such as, Parsley, Dill, Mint, Aleppo pepper, and Onion Powder. Once the herbs and celery have infused thoroughly, add this mixture to the beef and liquid and continue to cook for another hour. Optional, lemon juice can be used to add additional flavor to the stew if desired. Rice Preparation: Wash 4 cups of Basmati Rice and add 4 cups of water, add butter and oil and let semi cook until water had dissipated, then cover with paper towel and lid for 20 mins to steam cook. Top rice with Celery Stew and Enjoy!!
