Panjiri is a nutritional supplement to nurish and stregnthen the body. Specially recommended for new mothers/nursing mothers and growing children. Consume 2-3 TBS at a time, overeating may lead to indigestion.

Recipe in English:
Ingredients:
-Char maghaz (Mixed melon seeds) 1/4 Cup
-Safed til (Sesame seeds) 3 tbs
-Desi ghee 2-3 tbs
-Phool makhanay (Lotus seeds) 1 Cup
-Desi ghee 2-3 tbs
-Gond (Edible gum) ½ Cup
-Desi ghee 3-4 tbs
-Kaju (Cashew nuts) 1 Cup
-Badam (Almonds) 1 Cup
-Pista (Pistachios) 1 Cup
-Desi ghee 4-5 tbs
-Chakki ka atta (Whole wheat flour) sifted 3 Cups
-Sabut kali mirch (Black peppercorns) 1-2 tbs
-Brown or White Sugar 1 Cup
Directions:
-In frying pan, add mixed melon seeds, sesame seeds and dry roast until fragrant & set aside.
-In wok, add desi ghee and let it melt.
-Add lotus seeds and fry for 1 minute & take out in a bowl.
-Add desi ghee and let it melt.
-Add edible gum and fry on low flame until it puffs up. Keep stirring in between & take out in a bowl.
-In wok, add desi ghee and let it melt.
-Add cashew nuts and fry until light golden & take out in a bowl.
-Add almonds and fry for 1-2 minutes & take out in a bowl.
-Add pistachios and fry for 30 seconds & take out in a bowl.
-Add desi ghee and let it melt.
-Add whole wheat flour, mix continuously and roast on low flame for 18-20 minutes or until it changes color. Let it cool.
-In chopper, add fried nuts mixture. Chop coarsely & set aside.
-In spice mixer, add black peppercorns and grind coarsely & set aside.
-In spice mixer, add brown sugar & grind well.
-In roasted flour, add ground brown sugar, ground black pepper and mix well.
-Add chopped nuts mixture, roasted mixed melon & sesame seeds. Mix until well combined.
-Can be stored in an airtight container for up to 1 month.

-Gond dal dein aur halki aanch per phoolnay tak fry ker lein. Beech beech mein chamcha chalatay rahein or bowl mein nikal lein.

-Kaju dal ker light golden hunay tak fry ker lein & bowl mein nikal lein.
-Badam daal ker 1-2 minutes k liye fry ker lein & bowl mein nikal lein.
-Pista dal ker 30 seconds k liye fry ker lein & bowl mein nikal lein.
-Karhai mein desi ghee daal ker melt ker lein.
-Chakki ka atta dal dein aur halki aanch per 18-20 minutes ya color change honay tak bhoon lein. Musalsal chamcha chalatay rahein & thanda ker lein.
-Chopper mein fried nuts mixture daal ker coarsely chop ker lein & side per rakh dein.
-Spice mixer mein sabut kali mirch daal ker coarsely grind ker dein & side per rakh dein.
-Spice mixer mein brown sugar dal ker achi tarhan grind ker lein.
-Roasted atta mein ground brown sugar aur ground kali mirch daal ker ache tarhan mix ker lein.
-Chopped nuts mixture, roasted char maghaz & safed til daal ker ache tarhan mix ker lein.
-1 month tak airtight container mein store ker saktay han.
