Three different ways of duck breast plating! This is a dish I came up with after wanting to make something a little more sophisticated since it felt like it's been a while since I worked in a restaurant (although it's really only been couple of months). The duck was dry-aged in the fridge for 7 days to maximize the crisp of the skin. A great dish to end the year with :)
I tried plating the same components three different ways!  What was your favorite?

Although 2020 has been quite rough, it did motivate me to take on a new project (starting my own youtube channel.)

Nevertheless, I hope 2021 will be a better year for everyone!
