Asado typically features a variety of meats, with beef being the star of the show. Cuts of beef like ribs, flank steak, and sausages are commonly used. Other meats like chicken, pork, and lamb may also be included. We also use what we call "achuras". The most common ones are Chorizo, Morcilla, Mollejas, Chinchulines and Riñones.
A classic side is "provoleta," which is a provolone cheese cooked on the grill until it's melted and bubbling.
Asado is not just about the food; it's a social event. It's common for friends and family to gather around the grill, often with a glass of wine or a cold beer, and engage in conversation while the meat is being cooked.
