ingredients:
4 leg quarters

for the brine
6 cups water
2 tbsp salt
2 tbsp sugar
soak the chicken in the brine over night

for the broth
10 cups water
1 cup soy sauce
1/4 cup Hoisin sauce
2 tbsp sugar
1 tbsp chicken bouillon
1 tsp Chinese 5 spice
1/2  tsp white pepper
2 star anise
4 slice ginger
6 cloves garlic
4 stalks green onions
