Summer Special Bengali style Kacha Amer Misti Achar Recipe or sweet mango pickle recipe in Bengali. It is one of the popular Bengali amer achar recipe. So here is easy step by step recipe of how to make mango pickle at home.

Ingredients:
Green Mango - 500 gm
Sugar - 500 gm
Dry Red Chilli - 2 pcs
Fennel Seeds - 1/2 tea spoon
Panch Phoron - 1 tea spoon
Fenugreek Seeds - 1/2 tea spoon

Methods of how to make Kacha Aamer achar:
1. At first cut the mangoes in small pieces and wash properly.
2. Add 500 gm Sugar and mix well.
3. After mixing cover and put it aside for an hour.
4. Heat up a kadai and add 2 Dry Chilli (just for flavour). Roast them for a minute on medium flame.
5. Turn the flame to low and add 1 tsp Panch Foron, 1/2 tsp Fennel Seeds, 1/2 tsp Fenugreek Seeds and roast them.
6. After marinating the mango with sugar for 1 hour turn on your oven
7. Put the kadai on the oven and add the Mango. Cook on high flame.
8. When it starts boiling after the sugar melts.
9. Cook on medium to low flame till the mango is cooked.
10. Stir sometimes in the meantime so the sugar doesn't burn. It took about 30 mins to cook the mango.
11. Add 1/2 tsp Salt (as per taste), 1 tbsp. Crushed Roasted Masala. Mix well and cook on high flame.
12. Add another 1 tbsp. Masala in it.
13. Cook for 5-7 mins on high flame, it's a lot heavier now
14. Now mash the mangoes and turn off your oven.
15. Let it cool down for 1-2 hours and then serve.
16. Today's mouthwatering Green Mango Sweet Pickle is ready.
