Delicious eggplant roll: Quick and cheap dinner!
■ Ingredients ▶︎
2 medium aubergines
100 g mozzarella for pizza (or other cheese)
50 g parmesan
1 egg
parsley
1 clove of garlic
80 g breadcrumbs
olive oil, salt
Method:
- Cut the aubergines into cubes and cook them for 8 minutes in a pan with olive oil, salt and 1 clove of garlic
- Let the aubergines cool and chop the mozzarella
- Add the mozzarella to the aubergines together with the grated cheese, egg, parsley and breadcrumbs
- In a sheet of parchment paper add oil and breadcrumbs and pour the dough
- Compact the dough and roll up the paper closing it like candy
- Open the paper and dust the roll with breadcrumbs on all sides
- Bake in the oven at 180°C - 350°F with fan function for 30 minutes
