Doughnuts with glaze

Ingredients:

5 cups all purpose flour(plus more for kneading and rolling out the dough)
4 tsp instant dry yeast
2 eggs
1 1/2 cup luke warm milk
1 cup sugar
1/3 cup unsalted butter or shortening
1 tsp salt
1 1/2 tbsp vanilla extract
cooking oil (canola oil, vegetable oil, corn oil)

Glaze recipe:

Chocolate Glaze ingredients:

1 cup powdered sugar
2 tbsp cocoa powder
1 tsp milk or water
1/2 tsp vanilla extract

Mocha Glaze ingredients:

1 cup powdered sugar
1/2 tsp instant coffee powder
1 tsp milk or water

Vanilla Glaze ingredients:

1 cup powdered sugar
1 tsp vanilla extract
1/2 tsp milk or water

Procedure:

1) Combine luke warm milk and yeast. Mix and let it stand for 5 minutes.
2) Add eggs, butter, sugar, salt, vanilla extract and half of the flour.
3) mix just until combined before using the hand mixer
4) with the dough hooks mix and medium speed just until combined
5) Then add the rest of the flour
6) mix again until stiff
7) when the texture is sticky you can now knead it by hand .
  NOte: If you are using stand mixer mix for 5-6 minutes at medium speed
8) dust work surface with flour and knead dough until smooth and no longer sticky.
9) Transfer dough into a lightly greased bowl. Cover with clean kitchen towel and plcae it in warm area. Let it rest for 30-40 minutes until dough is doubled.
10)Cut dough into 2 portion so it will be easy to roll out
11)Lightly dust work surface and rolling pin.
12)Roll out dough into 1/2 inch thickness
13)Cut using floured cookie cutter or drinking glass.
14)Use a bottle cap to cut out the center of the doughnuts. Note: Do not cut the center for the Chocolate filled doughnuts.
15)Place doughnuts into a lightly greased/floured tray. Lay them an inch apart from each other
  (Optional) re-rolled scrap dough once only. You can make fun shaped doughnuts too.
16)Cover with clean cloth or towel and letit rest for another 30-40 minutes. Place in a warm place.
17)Pre heat the oil and when it's not(370 degress F) you can now start frying the doughnuts.
18)Fry doughnuts until golden brown on each sides. Note: Do not overcrowd. 3-4 doughts per batch only.
19)Flip doughnuts over to have an even color
20)Drain excess oil and do not forget to fry the doughnut holes.

How to make Doughnut glaze:

1) *Just mix all the ingredients for the Chocolate glaze
  *Just mix all the ingredients for the Mocha glaze. Strain the mixture.
  *Just mix all the ingredients for the Vanilla glaze.

Tips: If the texture is runny just add more powdered sugar to have a thick texture.

2) Dip doughnuts into the glaze and top with sprinkles or nuts.
3) For the Chocolate filled make a small hole into the doughnuts and insert a stick then wiggle it inside to make a space. Pipe chocolate frosting, fruit jams or peanut butter.
4) Dust with powdered sugar
