Grilled Shrimp and Couscous Salad, Chef Frank shows show how to make this simple yet tasty and healthy dish. RECIPE Ingredients...couscous salad 1 c. couscous 1 c. water 1 tsp. olive oil 1/2 tsp. salt 1/3 ripe avocado 1/3 ripe tomato (seeds and pulp removed) 1/2 c. crumbled feta cheese 5-6 (sized 16-20) shrimp 2 skewers Ingredients 6 lg. basil leaves (prepared chiffonade style...see video) 3 TBSP olive oil 1/2 tsp minced garlic INSTRUCTIONS 1. Combine basil, 3 TBSP olive oil and garlic in small bowl. 2. Devein and remove shrimp shells, leaving tails intact. 3. Skewer shrimp and brush with a bit of the basil oil. Refrigerate until ready to grill. 4. Add couscous to boiling water. Add salt and olive oil. Stir, cover and remove from heat. Let stand for 5 minutes before removing lid. 5. Fluff couscous with fork. 6. Refrigerate uncovered for 10 minutes then add feta. Return to refrigerator. 7. Remove the seed and skin from 1/3 ripe avocado. Slice lengthwise into 3 equal strips. (Prepare immediately prior to using to avoid browning). 8. Seed 1/3 ripe tomato. Slice lengthwise into 3 equal strips. 9. Grill shrimp approximately 3 minutes per side. 10. Mold couscous into small ramekin and center and serving plate. (Place serving side of plate on top of ramekin, then invert) 11. Arrange avocado, tomato and shrimp then drizzle liberally with basil oil.
