Dubu (ie. tofu) kimchi is
Dubu (ie. tofu) kimchi is a popular anju in Korea, which means it pairs nicely with alcoholic drinks such as soju or makgeolli. This dish consists of soft tofu and well-fermented sour kimchi that is stir-fried with pork. If you'd prefer to leave out the pork, that is fine too! For a more filling meal, you can serve dubu kimchi over rice.

➥ INGREDIENTS | 재료
For 2-3 servings:
• 1 onion, sliced 양파
• 3 scallions, cut diagonally (finely chop the green part of 1 scallion for garnish) 파
• 1 block of tofu, medium slices (1/2 inch thick) 두부
• 0.75 lb sliced pork butt 돼지고기
• 1 tbsp brown or white sugar 흑설탕
• 2 cups of sour kimchi 신김치
• 2 tsp minced garlic 간마늘
• 2 tbsp red chili pepper (gochugaru) 고추가루
• 1/2 cup of water + enough water to boil the tofu 물
• 1 tbsp soy sauce 간장
• 2 tsp sesame oil 참기름
• sesame seeds (optional) 깨소금

0:45 On Medium heat, add 2 tsp oil
0:55 Stir-fry the pork until it’s half-way cooked
1:00 Add the brown sugar and stir for 5 minutes
1:07 Add the kimchi, minced garlic, and red chili pepper
1:24 Cook for 10 minutes
1:33 Add the onions, 1/2 cup of water, soy sauce, scallions, sesame seeds, and sesame oil
2:03 Stir well!
2:08 In a pot, place the tofu in enough water to submerge them
2:12 Bring to a boil then turn off the heat
2:18 Drain the water
2:32 Garnish with sesame seeds and scallion
