This tutorial explains the difference between boiling and evaporation of a liquid.
When a liquid boils, the molecules throughout the bulk of the liquid have enough energy to break their liquid bonds and become a gas. The result is a violent bubbling as gas is produced throughout the liquid.
Evaporation is a much gentler and slower process where only molecules with enough energy at the surface of the liquid manage to break their liquid bonds and become a gas.
