Greek moussaka is quite easy to cook though it is considered a delicatessen. The taste of moussaka is unforgettable. The reason for it is a proper combination of ingredients – ripe tomatoes, eggplants and minced meat, preferably minced lamb. There are sure secret ingredients in the recipe which create that very unique taste of Greek moussaka – dry white wine a mince is stewed in and a sauce cooked in a special manner on the base of famous béchamel sauce. Besides, moussaka leaves a wide field for culinary experiments. On your own taste you can add cabbage, potato, squash or even chickpea, although it is no longer Greek but Balkan, Turkish or Bulgarian moussaka. So let’s start cooking this culinary masterpiece.

Ingredients:
• eggplant – 1 kg
• minced lamb – 650 g
• bulb onion – 2
• tomato – 3
• dry white wine – 150 ml
• olive oil – 2 tbsp
• salt – 1 tsp
• ground black pepper – ½ tsp
• oregano – ½ tsp
Sauce:
• milk – ½ l
• hard cheese – 130 g
• egg – 2
• flour – 2 tbsp
• butter – 90 g
• salt – ½ tsp
• ground black pepper – ½ tsp
• nutmeg – ½ tsp      
Preparation:
1. Cover the tomatoes with boiling water and leave for 10 minutes. Peel them and cut into half rings.
2. Cut the eggplants in rings, onion – half rings.
3. Heat a pan, sprinkle with olive oil and fry the eggplants for 40-50 seconds on each side over high heat.
4. Then sprinkle again the pan with oil and fry the onion for 2 minutes. Add the minced meat and fry for 2 minutes over high heat stirring constantly. Pour in 150 ml of dry white wine, add salt, pepper and oregano and fry the mince for about 5 minutes over medium heat until full evaporation of wine.
5. Make a layer of fried eggplants in a baking dish, follow with an even layer of minced meat and cover with a layer of tomatoes. Re-make all the layers.
6. Melt 90 g of butter over medium heat in an average saucepan. Add 2 tbsp of flour and mix well until smooth. Pour in gradually ½ l of milk and bring to a boil stirring constantly.
7. Take the saucepan off the stove and add the grated cheese, stir well until cheese melted.
8. Pour in by thin jets 2 whisked eggs stirring constantly not to have eggs boiled. The sauce is to be smooth.
9. Cover evenly all the stuff of baking dish with the sauce, it is final layer of moussaki.
10. Preheat oven to 180°C and bake moussaki for 40 minutes.
11. Take the dish out of the oven and leave it rest for 15 minutes. Moussaki is ready. Enjoy!
