OATMEAL MUFFINS RECIPE
- Soak together for 1 hour:
1c rolled oats
1c buttermilk or sour milk
- Mix together thoroughly
1/3c soft shortening
1/2c brown sugar
1 egg
- Sift together
1c flour
1tsp baking powder
1/2tsp baking soda
1tsp salt
- and stir in alternately with rolled oats and buttermilk. Fill greased muffin cups 2/3 full. Bake in a 400 degree oven for 20 to 25 minutes until golden brown. Makes 12 medium sized muffins.
