Hi, everyone! Today we would like to share with you how to make a moist and delicious brioche-like dessert: Babka Cake with Nutella Walnut filling.

The babka Cake is a sweet braided cake which originated in the Jewish communities of Poland and Ukraine. It is popular in Israel and North America, too. But now it has become increasingly popular in the world.

A babka is made with a rich brioche dough, and rolled out with a filling such as chocolate, cinnamon, or Nutella. It’s not only delicious, but also very easy to make with. This recipe is taken from the bakery “Babka Zana” which is a popular bakery in Paris. But we made a little adjustment on the filling and ingredients. BTW the dough can make two loaves. Please feel free to use your favorite filling. Hope you like this video. :)

How to make Nutella & Walnut Babka Cake

☞ The loaf pan size: 17x8x6cm
☞ This recipe can make two loaves

✎ Ingredients
☞ For the dough
all purpose flour  125g
cake flour 125g
instant dry yeast 4g
granulated sugar 50g
salt 3g
warm milk(35°~40°c) 60g
unsalted butter 80g, cubed, softened at room temperature
1 egg in medium size

☞ For the filling
Nutella 70g, per one loaf
walnut 40g, per one loaf

✎Instructions
1. Sprinkle the yeast over the warm milk(35°~40°c) , and give it a stir with a spoon and rest for 10 minutes.
2. Lightly grease the inside of a loaf pan with butter.
3. Chop the walnuts into small pieces, set aside.
4. Sift the two types of flour with a strainer.
5. Add the flour into the standing mixer bowl, then add sugar and salt, mix well.
6. Pour the egg, warm milk and yeast mixture, and mix dry and wet ingredients together slightly.
7. Using the dough hook, mix on low speed for one minute, then medium speed for 5-6 minutes or until dough comes together.
8. Add butter, mixing on medium speed until dough is completely smooth, shiny but not sticky. During mixing, you can scrape down the sides of the bowl, if needed.
9. Transfer the dough to a large bowl brushed with oil, cover with plastic wrap, and leave in the fridge for at least 2 hours or overnight. The dough may not look like it has risen much.
10. Divide dough in half. Roll the dough on a lightly floured surface and shape into a rectangle, the length of your mold and 3 times its width.
11. Spread Nutella filling on the Babka dough evenly and sprinkle the chopped walnuts.
12. Roll the dough tightly, using a knife to cut the Babka into half lengthwise.
13. Place the cutting side up and twist the dough on both sides, and place them in the loaf pans.
14. Cover the babkas with a towel and set in a warm place for 1-1.5 hours.
15. Preheat the oven to 180°c, and bake for 25-30 minutes.
16. Once baked, let the babka cool completely before taking them out from the loaf pan.
