Today I am sharing the recipe of Spicy Ginger Pickle

Here is the list of all ingredients and method of preparing:

Ingredients:
Ginger - 250 gms
Garlic - 7-8 cloves
Salt - one and half teaspoon
Kashmiri Chilli Powder - 2 tsp
Garam Masala - 1 tbsp
Turmeric Powder - Half tbsp
Mustard Oil - 6 tbsp
Asafoetida - 1/4 tsp
Black Pepper Corns - 1 tsp
Fennel Seeds- 1 Tsp
Bay Leaf - 1-2 leaves
Dry Red Chillies - 3
Vinegar - 50 ml
Tamarind Paste - 1 tbsp

Method:

1. Put Black Pepper Corns, Fennel Seeds, Bay Leaf and Dry Red Chillies into mixer jar and grind it.

2. Make paste of Garlic and 50 gms of Ginger.

3. Peel and Cut rest of the 200 gms of ginger in thin slices.

4. Take a pan and put mustard oil into it and heat it. Once it becomes hot then add ginger garlic paste into it. Roast the paste & then add prepared masala, asafoetida, Kashmiri Chilli Powder, garam masala, Turmeric powder and salt to taste into it, mix it well and roast until it leaves the oil. Then add tamarind paste and mix it.

5. After that add sliced ginger and vinegar into it and mix it. Cook for 1-2 minutes. Spicy Ginger Pickle is ready. Cool it and store it in a sterilized jar for later use. It can be preserved for 4-5 months.

If you want to add sweetness in this pickle then you can add jaggery into it. It is totally optional.
