This Half Homemade recipe from David Venable makes preparing a delicious bowl of soup so easy using supermarket shortcuts!
Makes 4 Servings
Ingredients:
1 tablespoon vegetable oil
2/3 cup shredded carrots
½ cup thinly sliced red bell pepper
¼ cup thinly sliced celery
¼ cup plus 3 tablespoons sliced scallions
2 teaspoons minced fresh ginger
¾ teaspoon freshly ground black pepper
5 cups low-sodium beef broth
2 tablespoons soy sauce

Directions:
1. Heat the oil in a large pot over medium heat. Add carrots, bell pepper, celery, the ¼ cup scallions, the ginger, and pepper and sauté for 5 minutes.
2. Stir in the broth and soy sauce and bring to a boil. Add the potstickers, reduce the heat, and simmer for 5 to 7 minutes, until the potstickers are heated through.
3. Ladle into bowls and sprinkle with the 3 tablespoons scallions.
