RECIPE - Chef Eric Crowley shares how to make Bread Pudding with Caramel Sauce. Use your leftover bread to create a fantastic dessert

Pumpkin Bread Pudding with Caramel Sauce /Yield: 16 Portions or 72 Bite-Sized Portions
2 c        Half and Half
15 oz   Pumpkin, canned
1 c       Brown sugar, light or dark
4  ea    Eggs Large
1/2 t    Cinnamon, ground
1/2 t    Clove, ground
Pinch   Nutmeg
1 ½ t    Vanilla extract
1 lb      Bread, cut into small dice
1/2 c    Raisins/Currants  
Method:
1. Preheat oven to 350 degrees. In a large bowl, combine the half and half, pumpkin, sugar, eggs, spices and extract. Mix well. Gently fold in the bread and currants.
2. Scoop the mixture into prepared muffin cups. Bake in the center of the oven until a cake tester comes out clean, about 20-30 minutes.
3. Serve with Caramel Sauce.

Caramel Sauce    Yield: 1 Cup
1/4 lb   Butter
1/2 c    Sugar
1/2 c    Cream, room temp
1/2 T    Vanilla
Method:
1. Melt butter /sugar in a small saucepan over medium heat.
2. Stir constantly until mixture melts. Then stop stirring and let mixture cook until it is light golden brown.
3. Remove from heat and add the cream (mixture will bubble,) and vanilla.
