This is our recipe for Mexican Street Corn dip, inspired by the same dip we tasted at Gordon Ramsay's Burger in Las Vegas. This has become one of our go-to recipes and favorite dips to serve with crispy corn tortillas!
Mexican Street Corn Dip
2 tbsp. unsalted butter
5 ears corn, shucked and rinsed
1- 2 jalapeños, seeded and diced
3 tablespoons mayonnaise
2 tbsp crumbled cotija, feta, or queso fresco cheese
2 tbsp chopped fresh cilantro leaves
1 tsp chili powder
1- 2 cloves minced garlic
½ medium yellow onion diced fine
2 tsp lime juice
Instructions
1. Melt butter in a large skillet over medium-high heat. Add corn and cook until slightly charred and browning - about 6-8 minutes in a cast iron skillet or 8 – 10 minutes in a non-stick pan.
2. Stir the kernels and add jalapeño and onions. Cook, stirring occasionally, for another 2-3 minutes.
3. Stir in mayonnaise, cheese, cilantro, chili powder, garlic and lime juice.
4. Serve warm with tortilla chips.
