Ingredients:
For batter:
2 cups - all-purpose flour
1 tsp - Vanilla extract
1 cup - Softened butter
3 - Eggs
2 tsp - Baking powder
1 cup - Granulated sugar
Whisk until light and fluffy.
dust a baking pan with flour
Preheat oven for about 20-25 minutes, Bake on 350°F for 25 minutes.
Cake Base:
Blitz cake into fine crumbs
Pour into a prepared cake pan. Press down firmly -
base only, not sides.
Filling:
500g - Philadelphia cream cheese, softened
½ cup - Condensed milk
10g - gelatin powder
3 tbsp - lukewarm water
½ tsp - Vanilla essence
Second Filling:
2 - Mango
½ cup - Condensed milk
½ tsp - Mango essence
10g - gelatin powder
3 tbsp - lukewarm water
Pour into the cake pan. Refrigerate 3+ hours until top is set.
Decorations:
1 cup - whipping cream
Mango as required
