Ingredients:
- For the pasta:
 - 200g penne or fusilli pasta
 - Salt, to taste
 - 1 tsp oil

- For the masala base:
 - 2 tbsp oil (preferably olive oil or any neutral oil)
 - 1 tsp cumin seeds
 - 1 bay leaf
 - 1 onion, finely chopped
 - 1 tsp ginger-garlic paste
 - 2 green chilies, slit (adjust to taste)
 - 2 tomatoes, finely chopped
 - 1 carrot, diced
 - 1 bell pepper (capsicum), diced
 - 1/2 cup green peas (fresh or frozen)
 - 1/4 cup sweet corn (optional)
 - 1/2 tsp turmeric powder
 - 1 tsp red chili powder
 - 1 tsp coriander powder
 - 1/2 tsp garam masala
 - 1/2 tsp chaat masala (optional, for a tangy twist)
 - Salt, to taste

- For finishing:
 - 1 tbsp tomato ketchup
 - 1 tbsp fresh cream (optional, for a creamy texture)
 - Fresh coriander leaves, chopped
 - Grated cheese (optional, for garnish)

#### Instructions:
1. Cook the Pasta:
  - Boil the pasta in salted water with a tsp of oil until al dente. Drain and set aside.

2. Prepare the Masala Base:
  - Heat oil in a large pan or kadai. Add cumin seeds and bay leaf. Let them sizzle for a few seconds.
  - Add the chopped onions and sauté until golden brown.
  - Add the ginger-garlic paste and green chilies. Sauté until the raw smell disappears.

3. Cook the Vegetables:
  - Add the chopped tomatoes and cook until they become soft and pulpy.
  - Add turmeric powder, red chili powder, coriander powder, and salt. Cook until the oil separates from the masala.
  - Add the diced carrots, bell peppers, peas, and sweet corn. Sauté for 3-4 minutes. Add a splash of water and cover to cook the vegetables until tender.

4. Mix the Pasta:
  - Once the veggies are cooked, add the cooked pasta to the masala.
  - Toss everything together to coat the pasta with the masala evenly.

5. Finish the Dish:
  - Add tomato ketchup and garam masala. Mix well.
  - For a creamy twist, stir in a tablespoon of fresh cream.
  - Garnish with freshly chopped coriander leaves and a sprinkle of grated cheese if desired.

6. Serve:
  - Serve the spicy masala vegetable pasta hot, garnished with extra coriander or cheese.

Tips:
- You can customize the vegetables according to what’s available.
- Adjust the spice levels to suit your taste by adding or reducing the amount of green chilies and red chili powder"
