If you follow these steps you will never serve another over salty ham again. It's well worth the time and ingerdients.

6-8 pound smoked ham shank/butt:

Day 1: Remove ham from package, rinse well set aside, in a large stock pot add 1/4 cup white vinegar (vinegar opens the pores of the ham and releases the salt). Fill pot about half full of cold water. Place ham into pot. Add more cold water to cover ham. Cover pot and place into the fridge for 4-6 hours. Remove from fridge,rinse ham again,wash pot. Place ham in pot and fill with water. Repeat this process 3-4 times on day 1

Day 2: Remove ham from pot and rinse well. set aside. Pour out water from pot, wash pot. Fill half way full with cold water, place ham back into pot,add more water just to cover ham. Cover place back into the fridge 4-6 hours and repeat 3=4 times on day 2.

Day 3: Remove ham from pot,rinse. Pour out water, wash pot. Add 1 cup of brown or white sugar 2 cups water in stock pot. Bring to a simmer and whisk until sugar dessolves. Add 2-3 tablespoons of vanilla and fill pot half full of cold water, whisk well add ham to pot,add water just to cover ham. Cover pot place in fridge. Allow to sit overnight and right up until time to cook it. Remove from pot don't rinse the ham this time. Allow ham to drain. Cook ham as you always do.
