مقادير سبونج الشوكولا:
120 غ صفار بيض ( تقريبا 6 صفار بيض )
240 غ بياض بيض (تقريبا 6 بياض بيض)
0.5 ملعقة صغيرة ملح (3 غ)
80 غ سكر بودرة
40 غ زبدة
20 غ حليب او كريمة
125 غ طحين متعدد الاستخدامات
25 غ كاكاو
5 غ بيكنج باودر
80 غ سكر عادي

120 g egg yolks (about 6 egg yolks)
240 g egg whites (about 6 egg whites)
0.5 teaspoon salt (3 g)
80 g powdered sugar
40 g butter
20 g milk or cream
125g all-purpose flour
25 g cocoa powder
5 g baking powder
80g Sugar
Whipped Chocolate Ganache Ingredients:
130 g whipping cream 35% fat (1)
20 g glucose
150 g dark chocolate
300g whipping cream 35% fat (2)
