ARBI KI SABZI / COLOCASIA RECIPE / TARO ROOT RECIPE
Arbi has various health benefits like, it helps in keeping the blood sugar levels in control, reduces the risk of heart disease and reduces risk of cancer. As it is rich in fiber, it is also effective for weight loss. It helps in keeping you fuller for longer and thus stops you from binge eating. Arbi is a known low glycaemic food that slows down the process of breaking down of glucose in the liver. It also contains resistant starch that is not easily absorbed and digested.

INGREDIENTS

250 grms Arbi

¼  tsp Turmeric Powder

½  tsp Red Chilli powder

½  tsp Amchoor Powder

1 tsp Coriander Powder

1/4 tsp Garam Masala Powder

Fresh Coriander for garnish

Salt to taste

2 tbsp Oil

½  tsp Jeera

½  tsp Ajwain

A pinch of  Asafoetida

1 finely chopped Green Chilli

1 tsp grated ginger

METHOD
Wash and cook arbi  in a pressure cooker with just enough water for 1 or 2 whistles till just done OR boil in a pan till done OR steam it till it is done – Don’t over cook .
Peel off the skin and cop into big pieces  .
Heat oil in a  pan.
Add jeera + ajwain and let it crackle .
Add ginger + green chilli + curry leaves and stir fry for few seconds .
Lower the flame and add red chilli pwdr + turmeric + coriander pwdr + garam masala pwdr + asafoetida + salt and stir fry for few seconds .
Now add the arbi and give a nice mix .
Stir fry on medium for 1 min so that it is well coated with the masalas .
Let it cook on medium flame  for 4 to  5 , stir in between to turn the sides.
The sides should become crisp .
Finaaly add leaves and off the flame
Serve  with as side dish .
NOTE-

Don’t over boil arbi ,it should be just done,otherwise it may become mushy while stir frying.

If possible then boil arbi, peel and keep refrigerated for few hours then stir fry,this reduces its sliminess.

Adjust the spices as per taste, carom seeds add a nice flavour and helps in digestion

You can replace the amchur powder with lime juice , add it at the end.
