How to make Dora Cake/ Dorayaki & chocolate spread at home| Fluffy pancakes| Kid's fav| Yummylicious

Doraemon is everybody's favorite cartoon and Doraemon's favorite is Dora cakes. So surprise is your kids by making this amazing recipe of Dora cakes at home. This recipe is great for breakfast. Traditionally Dora cakes are known as Dorayaki in Japan and the filling inside is of Sweet red beans Azuki paste. But since the ingredients to make it is not easily available I have modified this recipe and make a chocolate spread. This chocolate spread can be used in making chocolate sandwiches or could be rolled in chapati as well.
This overall recipe is super easy and you will get the fluffiest, softest pancakes. The creamy chocolate spread enhances its taste as well and not only kids but even adults will love it...
This recipes makes 3 -4 dora cakes or 7 - 8 pancakes (medium sized)
So here is the list of ingredients :

- Carefully crack 1 egg
- Separate egg whites and the egg yolk
( Note : Do not let even a tiny bit of yolk enter the egg whites)
- Whisk on medium speed until a bit foamy
- Add Caster Sugar (4 Tsp)
- Whisk on high till you get stiff peaks.

In another bowl
- Egg yolk
- Honey (1/2 Tbsp)
- Caster Sugar (2 Tbsp)
- Vanilla extract (1/2 Tsp)
- Blend till the color of yolk lightens and the mixture becomes a bit lighter
- Milk (3 Tbsp)
( You can add more milk after adding flour if you think its too hard to work with, I have not added more than 3 tbsp milk. Do not make the batter runny or else the cakes won't become fluffy)
- Oil (1 Tbsp)
- Blend until everything is well combined.
Sift
- All purpose flour (1/2 Cup)
- Baking Powder (1/2 Tsp)
( Baking powder consists of both tartaric acid and soda bicarbonate so when you put in eggs there is no need to put additional acid )
- Mix using a spatula
- Do not use whisk as flour will form gluten and pancakes won't rise they will become chewy.
-Use cut & fold method to mix
- Add egg whites in 3 batches
- The first batch, will be harder to mix to you can mix it vigorously
- The next two batches should be strictly mixed very lightly.
- Use Cut & Fold method to mix
- The air incorporated in the egg whites will make the pancakes lighter and fluffier.
- If you mix vigorously then the pancakes will become flat so be careful.
- Cover & refrigerate for 15 min
( Resting helps even hydration & gluten relaxation.)

To cook the pancakes :
- Put butter (1/2 tsp)
- Rub it off using a paper towel
( If you do not rub, then you will get uneven surface, somewhat bubbly and really not pleasing. So this step is utmost important )
- Pour some batter on the pan
( Medium scoop )
- Do not spread just give it a circular shape.
- When tiny bubbles appear, flip it.
- Remove on cooling rack

Chocolate Spread :
- Fresh Cream (1/3 cup)
- On low flame
- Let it simmer
( When tiny bubbles appear )
- Turn the gas stove off
- Milk chocolate (1/3 Cup)
- Dark chocolate (1/3 cup)
( If you very sweet chocolate spread you can put 2/3 cup milk chocolate and avoid dark , but I find this as a best combination )
- Butter (1 Tsp)
- Let it sit for 3 - 5 min
- Whisk it up
- In the beginning you will feel its not at all coming together but don't worry, it comes together very well just keep whisking
- Let it cool to room temperature
( After it cools down it will become thick & spreadable )
- After it cools down, put filling on the pancakes
- Put it in the middle
- Spread very less at the edges and more should be in the middle.
- Top with another pancake & Sandwich it.
- If you cut in between, you will see how fluffy and soft the pancakes become.
- These pancakes becomes very airy and superb in texture.
- Even texture wise this is an amazing way to make pancakes.
- According to my personal experience, I think these are the best pancakes and dora cakes I ever had. So I highly recommend you all to try at least once and I'm sure it won't stop..
