To cook Aloo pakora / Aloo pakodi / Potato fritters

The Recipe
-Potato                                    400gm
-egg.                                       1
-plain flour / chickpea flour.    1 table spoon
-chilli, S&P to taste
-Spring onion                          50gm

Battered recipe
-Flour.                                    100gm
-Water / Soda water              80ml
Mix it through

Method.
-Mash the potato then put all ingredient in the mash &
mix it throught. Make a disk shape then dip in flour battered then deep fry it.
cok it unitl it’s golden brown.


Preparation,
Heat water in a pot to a simmer, then add the potatoes, cover & simmer for about 15 minutes, until it can be mashed easily. Dry the potatoes on a towel, allowing them to steam to remove excess moisture, then transfer to a large bowl. Mash the potatoes until no large chunks remain. Add the salt, pepper, chilli flakes, spring onions, egg & plain flour / Chickpea flour. Mix until evenly incorporated. Shape the potato mixture into 2.5 inch disk shape. Separate the flour, battered into separate bowls. Dredge the Pakora / Pakodi into the flour, shaking off any excess, then dip them into the battered. Heat oil in a pot to 180°C/350°F. Fry few pakora / pakodi at a time until golden brown, then drain on a paper towels with a sprinkle of salt. Cool, then serve with aioli sauce or yogurt sauce.
