Pata Tim Recipe Ingredients:
1 pork leg
1/3 cup light soy sauce
1/3 cup dark soy sauce
2 tbsp brown sugar
1 1/2 cup pineapple juice
5 cloves garlic
1 big onion
1 tsp peppercorn
3pcs bay leaves
1/2 tsp chilli flakes (optional)
pineapple slice
pechay
cornstarch mixture (1tsp cornstarch mix with 1tsp water)
3 cups water

Pata Tim Recipe Procedure:
Make sure your pork leg is clean and wash properly before boiling.
Boil it for atleast 10mins to remove the impurities.
Then, wash it again and let it dry.

In a bowl, combine braising sauce (1/3 cup light soy sauce, 1/3 cup dark soy sauce, 2tbsp brown sugar and 1 1/2 cup pineapple juice.
Prepare the pressure cooker, if not available you can use a large pan.
Sauté onion and garlic.
Then, add the pork leg, the braising sauce, 1tsp whole peppercorn, 3pcs bay leaves, 1/4 tsp chilli flakes (optional), and 1/4 tsp ground black pepper.
Let it boil.
Then add 3 cups water.
Cover the pressure cooker and let it cook for 45mins. If you're using a pan, cook it for 1 1/2 hour or until the pork is tender.
After 45mins check if the pork is tender.
Then, add the pineapple slice and let it simmer for 10 mins.
Then, add the pechay leaves and the cornstarch mixture to make the soup a bit thicker.
Simmer for another 3-5mins.
Then, transfer it to a serving plate.
