KOTHIMBIR MUTTON INGREDIENTS1 kg mutton2
KOTHIMBIR MUTTON
INGREDIENTS
1 kg mutton
2 cups of yogurt
2 large bunches of coriander cleaned washed and chopped
3 large onions finely chopped
1 tbsp each, ginger, garlic and green chilli paste
1 tbsp garam masala powder
2 star anise, 1” cinnamon, 10 peppercorns, 5 green cardamoms
¼ cup oil
½ cup ghee
Salt to taste
METHOD:
i. Heat the ghee and the oil and fry the onions till brown
ii. Add the ginger, garlic and chilli paste and fry for a minute
iii. Add the mutton and sear it till it dries
iv. Add the yogurt and sear till oil separates
v. Then add ½ the coriander, garam masala and ½ liter of water, salt and cook till the mutton is done
vi. Add the remaining coriander and cook for 3-4 minutes and serve
