It’s another new year and I’m sure many of you guys have already set your New Year’s goals. For me, I just want to maintain a healthy lifestyle. So to help me do that, I’ll be making a yummy Soba stir fry noodle that contains almost a whole pound of veggies! It’s so quick and easy to make that there’s no excuse for laziness here.

SOBA CHICKEN STIR FRY RECIPE: serves 4

Ingredients:

- 3 chicken breast tenders
- 1 tbsp of soy sauce
- ½ tsp sugar
- ½ tsp sesame oil
- 1 onion
- 1 red bell pepper
- 1 carrot
- 1 cup purple cabbage
- 2 stalks celery
- ½ cup snow peas
- 1 tbsp of Gochujang
- 3 tbsp soy sauce
- 1 tbsp honey
- 2 cloves of minced garlic
- 1 small piece of ginger, finely minced
- 2 tbsp water
- 2 bundles Soba noodles
- sesame oil for frying

Preparation:

I’m going to start by slicing 3 chicken breast tenders and placing them in a bowl. Then I’ll add 1 tbsp of soy sauce, ½ tsp sugar, and ½ tsp sesame oil, and that’s all I need for my marinade, it’s so simple. If you don’t like chicken you can substitute for tofu or try my spicy pork recipe or bulgogi recipes!

Now I’ll move on to my veggies. I’m using a cornucopia of veggies here so feel free to mix and match whatever you’d like. First, i’m taking an onion and making radial cuts like this, then I’ll set it aside. Now i’ll take a red bell pepper, and slice it into strips, 1 carrot, sliced diagonally, about a cup of purple cabbage, thinly sliced, 2 stalks of celery cut into small diagonal slices, and then some snow peas with the ends cut off. You’re basically eating the colors of a rainbow! A variety of nutrients in every bite.

Finally I’ll prepare my sauce before we start cooking, this will be somewhat Korean inspired. In another small bowl I’ll combine 1 tbsp of gochujang, which is hot pepper paste that has been fermented. You can find this at any asian grocery store!, 3 tbsps soy sauce, 1 tbsp honey, 2 cloves of minced garlic, 1 small piece of ginger, finely minced, and 2 tbsps water. I’ll mix everything well and then set aside.

Now over to the stove where we’ll make our noodles! Soba is a Japanese noodle traditionally made with 100% buckwheat flour. And since since buckwheat flour is made from a seed, it’s gluten free! Soba is a really good source of protein and fiber!

In a pot of boiling water, I’ll cook the soba noodles for 2-3 minutes until they’re slightly “al dente”. I don’t want them fully cooked because they’ll continue cooking when I stir fry them later. Once the noodles are done, I’ll drain it and run it under cold water to stop the cooking.

Now in a large wok on high heat, I'll add a tbsp of sesame oil and heat it up until it starts smoking. Then I’ll add my chicken and cook it for a few minutes until it’s fully cooked. Then I’ll add my veggies and cook them for 2-3 minutes just until they have a glossy finish. Finally I’ll add in my cooked soba noodles and pour my sauce into the wok and mix everything together. And that’s all there is to it! This is what I make for dinner all the time when I need something quick.

The soba noodles are perfectly cooked and there’s a crunchy veggie in every bite. And it’s all lightly coated with the sauce and the hint of heat from the Gochujang really comes through. It’s so satisfying.
