For Manchurian Balls:

Ingredients:

Grated carrot: 1 cup
Garted/shredded cabbage: 1 1/2 cup
Chopped white spring onions: 1/2 cup
Thinly diced beans: 1/4th cup
Thinly diced capsicum: 1/4th cup
Ginger garlic paste: 1 teaspoon
Salt: 3/4th teaspoon
Black pepper powder: 3/4th teaspoon
Soya sauce: 1 tablespoon
All purpose flour/maida: 4 tablespoons
Corn flour: 5 tablespoons
Oil: for frying

Procedure:

1. Add grated carrot, grated or shredded cabbage, chopped white spring onions, thinly diced beans, thinly diced capsicum, thinly chopped coriander, ginger garlic paste, salt, black pepper powder, soya sauce, all purpose flour or maida and cornflour to a large bowl.
2. Mix well and keep aside.
3. Add oil for frying and when the oil is hot, make medium sized balls out of the mixture and lower into the hot oil.
4. When  the manchurian balls appear dark brown and firm, remove from the pan and keep aside.
5. If the balls appear soggy, fry again.


For the Garvy/Final Preparation:

Ingredients:

Fried manchurian balls
Oil: 3 tablespoons
Diced ginger: 1 1/2 teaspoon
Diced garlic: 1 1/2 teaspoon
Chopped green spring onions: 1/2 cup
Chopped coriander: 1 tablespoon
Whole green chilli: 1
Salt: 1/4th teaspoon
Red chilli powder: 1/4th teaspoon
Red chilli sauce: 1 1/2 teaspoon
Green chilli sauce: 3/4th teaspoon
Soya sauce: 1 tablespoon
Red food colour: few pinches (optional)
Corn flour: 1 tablespoon
Chopped green spring onions: 1 tablespoon for garnishing
Chopped coriander: 1 tablespoon for garnishing

Procedure:

1. Add oil to another pan (take from the oil used for frying the manchurian balls).
2. Add diced garlic, diced ginger, 1/2 cup chopped green spring onions, 1 tablespoon chopped coriander, thinly diced green chilli, salt, red chilli powder, red chilli sauce, green chilli sauce, soya sauce and red food colour.
3. Mix 1 tablespoon cornflour in 1/2 a cup of water.  Add this  cornflour mix to the pan while stirring continuously.
4. Add the fried manchurian balls. Mix well as the gravy thickens.
5. Switch off the flame, dish out and garnish with  1 tablespoon chopped green spring onions and 1 tablespoon chopped coriander.

Vegetable Manchurian Dry is ready to be served.
