Eggplant rolls with cheese are a simplified version of the famous Georgian snack, the filling of which is made from chopped walnuts, green garlic, vinegar and spices.

Eggplant - 360 g
Salt - 8 g
Pepper mix
Buckwheat yogurt - 50 g
Feta cheese - 50 g
Bell peppers - 60 g
Tomato - 90 g
Vegetable oil for frying

Prepare the eggplant.
Wash them, cut into longitudinal 2mm thin slices and place in a bowl.
Sprinkle generously with salt and let sit for 10-15 minutes.
Rinse the strips of eggplant with running water and place on a paper towel.
Dry well
Heat the pan well.
Fry the eggplant strips in portions (about 3 minutes on each side).
Let cool well.

Prepare the filling for the eggplant rolls.
Mash the cheese well, mix until smooth with yogurt and spices, add garlic if desired.
Cut the bell pepper and tomato into large strips.

Roll the strips of eggplant with cheese filling into rolls and add pepper or tomato.
Cover with cling film and refrigerate for 1.5 hours.
Garnish as desired before serving.
