Brine/Marinade: 10 boneless skinless chicken thighs
3 cups buttermilk
1/2 cup Louisiana hot sauce
1/2 cup pickle juice
1 tbsp smoked paprika

Nashville Hot Chicken Dredge:
1 3/4 cup flour
3/4 cup cornstarch
2 tbsp onion powder
1 tsp garlic powder
1 tbsp paprika
2 tsp mustard powder
2 tsp kosher salt
2 tsp black pepper
2 large eggs (add after brining chicken)

Spicy Oil: Medium
1 cup clarified butter
2 tbsp smoked paprika
1 tbsp Kashmiri chili powder
2 Fresno chilis ground up
2 tbsp dark brown sugar
2 tsp garlic powder
1 tsp kosher salt
1 tsp black pepper

Spicy Oil: Hot
3/4 cup reserved frying oil
1/4 cup cayenne pepper
2 tbsp dark brown sugar
2 tsp garlic powder
1 tsp kosher salt
1 tsp black pepper

Coleslaw Dressing:
1 cup mayo
3 tbsp Apple cider vin
1 tsp celery seed
2 tsp sugar
1/2 tsp salt
1/2 tsp pepper

To Finish:
Toasted Brioche buns
Dill pickles (you can use bread and butter if you prefer)
