Palak Methi and Corn Subzi

You can't do without enough calcium and iron throughout the nine months of gestation. All great sources of calcium - fenugreek, spinach and curds add a distinctive flavour to this corn subzi, helping you ensure your baby is born with strong bones.

Preparation Time: 10 minutes.  Cooking Time: 8 minutes.  Serves 4.

ingredients
1 cup blanched and chopped spinach (palak)
½ cup chopped fenugreek leaves (methi)
½ cup boiled sweet corn kernels (makai ke dane)
1 tsp oil
3 cardamom (elaichi)
2 cloves (laung / lavang)
1 bayleaf (tejpatta)
Salt to taste
½ tsp garam masala

For the white gravy
2 tsp oil
1 cup chopped onions
1 tsp finely chopped ginger (adrak)
1 tsp finely chopped garlic (lehsun)
¼ tsp finely chopped green chillies
1 tbsp broken cashewnuts (kaju)
½ cup whisked curds (dahi)

1. Heat the oil in a deep non-stick pan, add the onions and sauté till they turn translucent.
2. Add the ginger, garlic, green chillies and cashewnuts, mix well and cook on a medium flame for about 1 minute. Remove and keep aside to cool slightly.
