Easy Italian deli lettuce wrap, keto friendly

I used the name "Italian" because I tried to capture the delicious flavor of the grinders (hoagies, heroes, subs, etc.) that were sold in the Italian delicatessens where I lived in New England. This meal is low in carbs with a generous portion of extra virgin olive oil, making it keto friendly. It is also appropriate for those who are gluten intolerant.
