60 grams of sodium acetate trihydrate are mixed with 10 ml of water. The mixture is heated until the acetate melts. The mixture is poured into a crystallizer and the crystallizer is paced in a cold water bath.

Since we have used tap water, the acetate crystallises in a disorderly way (tap water contains salts and impurities, which initiate crystallization). To achieve the "instant ice" effect, with a progressive and orderly crystallization, it is necessary to use distilled water. Using distilled water, we can initiate ordered crystallization by adding some acetate crystals to the solution once it is cooled. There are lots of videos about it on YouTube.
