PRAWN PULAO
Ingredients

PRAWN PULAO
Ingredients
2 cups raw rice - wash and soak for 10 minutes
½ kg cleaned and de-veined prawns
3 tablespoons ginger garlic paste
3 onions sliced finely
3 green chilies slit lengthwise
3 tablespoons chopped coriander leaves
2 teaspoons chillie powder
1 teaspoon all spice powder / garam masala powder
½ cup oil or ghee
1 teaspoon coriander powder
2 pieces cinnamon
5 or 6 cloves
5 or 6 cardamoms
1 bay leaf
Salt to taste
Wash and devein the prawns and keep aside.
Heat 2 tablespoons oil in a pan and fry 1/2 the onions till golden brown.
Add the 1 teaspoon ginger garlic paste, 1 teaspoon red chillie powder, 1/4 teaspoon turmeric and 1 teaspoon garam masala powder and a few coriander leaves and sauté for some time.
Add the prawns and salt to taste and mix well. Cook for about 5 minutes on low heat.
Remove and keep aside
Heat the oil and ghee in a suitable pot or vessel and fry the cinnamon, cloves, cardamom and bay leaves for 2 or 3 minutes.
Add the remaining onions and green chillies and fry well
Add the ginger garlic paste, 1 teaspoon chillie powder, 1/2 teaspoon turmeric, 1/2 teaspoon coriander powder and stir fry till the tomatoes turn soft and the oil floats at the sides.
Add 3 cups of water and bring to boil.
When bubbling well, add the rice and mix well. Cook on high heat till the rice is cooked and the rice comes up. Lower the heat and cook till all the water dries up.
Cover and let it remain for 10 minutes before serving
Serve hot with Prawn Vindaloo and salad.
