WHO IS THE SPEAKER?
Meet Chef Allan Mertola, also known as Chef A, a self-taught executive dimsum chef who began as an apprentice in a Manila Chinese restaurant. Though he studied Computer Programming, his love for dimsum led him to master the craft by age 17. Chef A climbed the ranks to become a Dimsum Chef at EDSA Shangrila Hotel and later, Head Chef at Shitamachi Ramen Philippines. He also made TV appearances. Now, he consults for restaurants, supplies to top hotels and airlines, co-owns Hokkian Kitchen Co., and runs Chef A Dimsum Palace. Committed to mentoring, he leads workshops nationwide, inspiring the next generation of dimsum chefs.
