You'll usually find these  Papparoti buns, otherwise known as Mexican buns, with a crispy coffee top with a butter filling. Today I'm giving this bun a spin by making a crispy matcha top with a matcha custard filling instead of butter!

The bun itself is the same as the pineapple bun recipe so for:

Milk Bun Ingredients | 麵包材料
350g Plain Flour | 350g 麵粉
125mL Milk | 125mL 牛奶
40g Sugar | 40g 糖
1 Egg | 1個 雞蛋
5g Salt | 5g 鹽
30g Butter | 30g 牛油
2.25tsp Instant Yeast | 2.25茶匙 速發酵母

Yudane Ingredients | 湯種材料
70g Plain Flour | 70g 麵粉
70g Boiling Water | 70g 開水

Matcha Custard Ingredients | 菠蘿皮材料
2 Large Eggs | 2個 大雞蛋
1 Egg Yolk | 1個 蛋黃
60g Sugar | 60g 糖
15g Potato Starch | 15g 土豆粉
300g Milk | 300g 牛奶
15g Butter | 15g 牛油
15g Cake Flour | 15g 蛋糕粉
15g Matcha Powder | 15g 抹茶粉

Matcha Crust Ingredients | 抹茶皮材料
60g Butter | 60g 牛油
50g Sugar | 50g 糖
1 Large Egg | 1個 大雞蛋
70g Cake Flour | 70g 蛋糕粉
5g Matcha Powder | 5g 抹茶粉
