Authentic Kerala Rose Cookies | How to make Eggless Achappam Recipe
Kerala rose cookies are rose shaped deep fried cookies made with rice flour and coconut milk. They are popularly known as Achappam. You will need cookie mould for this cookies (one that is used in video). If you are living outside India you will find this mould in south Indian grocery stores.
Enjoy this cookies as evening snacks with some chai or filter coffee

Important tips 👇
👉 Batter consistency should be runny. Dip spoon into batter and if batter coats it has correct consistency
👉 If needed add more coconut milk to adjust the consistency
👉 You can use coconut sugar or regular sugar insist of jaggery
👉 You can use white sesame seeds instead of black sesame seeds
👉 Sugar/Jaggery is usually added less in rose cookies. But you like it more sweet you can add more sugar/jaggery
👉 Let cookies cool down completely before storing in an airtight container
👉 Make sure mold is hot enough or else batter won't stick to the mould
Ingredients
☑️ 1 cup coconut milk | १ कप नारियल का दूध
☑️ 3/4 cup all purpose flour | ३/४ कप मैदा
☑️ 1/4 cup rice flour | १/४ कप चावल का आटा
☑️ 3 tbsp jaggery powder | ३ बड़े चम्मच गुड़ का पाउडर
☑️ 1/4 tsp salt | १/४ छोटा चम्मच नमक
☑️ 1 tbsp black sesame seeds | १ बड़ा चम्मच काले तील
☑️ 1 tbsp coconut oil | १ बड़ा चम्मच नारियल का तेल
☑️2 cups oil (for frying) | २ कप तेल (तलने के लिए)
