Hi guys! ♡
I decided to record MY take on curry chicken recipe for anyone who might want to try it! Curry chicken is one of my absolute faves!!!!!! I filmed it a bit ago, so this recipe is simple & perfect for beginners..😋
DISCLAIMER: THIS IS MY RECIPE! TO EACH HIS OWN! ☺️😘 I add ketchup to my curry, but some people may not. You can add coconut milk if you'd like. You can add whatever herbs & spices you'd like. I ran out of ginger, but besides that - I wouldn't add or take away anything. Just add a bit more curry to “burn” in the beginning! AND NOPE - NO RUNNING BELLY!! LMAO

I forgot to mention in the video that you can either have it with white rice, rice & peas or dumplings. I like mine with any of those, but in this video - I had it with white rice.
For this recipe, I used:
✨3 lbs chicken, cut in medium pieces
✨3 tbsp extra virgin olive oil
✨1 cup water (or coconut milk, depending on preference)
✨6 tbsp Jamaican curry powder (burn 1 tbsp in the oil before cooking chicken)
✨1/2 tsp seasoned salt
✨1/2 tsp garlic salt
✨1/2 tsp all- purpose seasoning
✨pinch of black pepper
✨1 scotch bonnet pepper
(You can add it whole & uncut for flavoring, but I cut a small piece and added it to mine)
✨4 garlic cloves, chopped
✨3 stalks scallion, chopped
✨a few sprigs of fresh thyme
✨1 medium onion, chopped
✨ 1-inch ginger root, finely chopped
✨2 small potatoes, chopped in cubes
✨2 small carrots, chopped
✨2 tbsp ketchup + a little curry powder for the gravy (optional)
