These wonderful biscuits (we would call them cookies here in the US) are named for the Australia and New Zealand Army Corps. The biscuits are sturdy, and were made for soldiers during the war as they would travel well. ANZAC Day is celebrated in the UK on April 25, and we decided to try making these to honor the day. The one ingredient that is not readily available around our parts is the golden syrup, but it can easily found online.


1 cup flour
1 cup sugar
1 cup old fashioned oats
1 cup dried coconut
1/2 cup unsalted butter (1 stick)
1-2 TBSP golden syrup
1 tsp baking soda
2 TBSP boiling water


Preheat oven to 375 degrees. Line two baking sheets with parchment paper.


In a large bowl, mix flour, sugar, oats, and coconut.


In a small saucepan, melt butter and add syrup together.


In a small cup or bowl, put in baking soda and add boiling water. Stir to dissolve. Add baking soda and water to the butter/syrup mixture and stir to combine. Transfer wet mixture to large bowl of a stand mixer. Add dry ingredients and mix to combine. Mixture will be very thick and stiff. Add 1 or 2 TBSP of hot water if needed in order to pull mixture together into dough.


Drop by tablespoons on to baking sheets. Cookies will spread as they bake, so give plenty of room in between. Bake 12 minutes or until golden brown.


Allow biscuit to cool for a couple of minutes on baking sheet, then transfer to cooling rack.
