Mix Vegetable Suji Handvo
Mom and I actually were discussing experimenting with this variation to our traditional Gujarati Handvo and so had to come back and make this recipe first for all of you. It’s full of veggies and a perfect snack that can even replace dinner. You can control amount of oil too and add as many types of veggies as you like; making it nutrition powerhouse
Ingredients :
1 cup Semolina (Suji)
1/2 cup Curd (Dahi / alternatively water can be used)
1/4 cup Water
Shredded Carrot
Shredded Bottle Gourd
Shredded Beetroot
Fresh Green Peas
Sweetcorn
Raw Peanuts
Finely chopped Garlic
Finely chopped Ginger
Finely chopped Green Chillies (as per taste)
Finely chopped Coriander
1 tsp Cumin Seeds (Jeera)
Salt as per taste
Sugar (as per taste)
Cooking Soda
1 tbs Oil
Mustard Seeds (Rai)
White Sesame Seeds (Safed Til)
Pinch of Asafoetida Powder (Hing)
Few Curry Leaves
Method :
In a mixing bowl take 1 cup Semolina (Suji)
Add 1/2 cup Curd (Dahi)
Give it a good mix
Add 1/4 cup Water (or as required)
Mix it well and leave for 30 minutes
Add veggies (shredded Carrot, Bottle Gourd, Beetroot & Green Peas)
Add few Sweetcorn
Add few raw Peanuts
Add finely chopped Garlic
Add finely chopped Ginger
Add finely chopped Green Chillies (as per taste)
Add finely chopped Coriander
Add 1 tsp Cumin Seeds (Jeera)
Add Salt as per taste
Add a little Sugar (or as per taste) and mix it well
Add Cooking Soda, mix it and quickly start making handvo
Heat 1 tbs Oil in a pan
Add Mustard Seeds (Rai)
Add White Sesame Seeds (Safed Til)
Add a pinch of Asafoetida Powder (Hing)
Add few Curry Leaves (optional)
Add a ladleful of batter to make small handvo
Cover the lid and cook it on slow to medium flame
Flip handvo and cook the other side too
Cook until both the sides are nice golden-brown
Take it on a serving plate
Enjoy Scrumptious Mix Vegetable Suji Handvo
