🗝️ Chicken Tortilla Soup
6 - 8 cups Chicken broth
Handful chopped cilantro
2 tomatoes, diced
1 – 2 cooked chicken breast, diced
2 - 3 scallions sliced (reserve some for topping)
1 small can diced chilis, drained.
Salt and pepper to taste
Tortilla chips
Shredded Monterey Jack cheese
Avocado
Sour cream
Add chicken broth, cilantro, tomatoes, cooked chicken, scallions, diced chilis, salt and pepper to a large pot and cook over medium heat. Cook for 10 to 15 minutes. Place tortilla chips in a bowl. Ladle soup on top and top with desired toppings. Enjoy!
🗝️ Mixed Berry Compote Tart
2-- 3 cups mixed fruit
Juice from half a lemon
Tbsp sugar
Tbsp cornstarch
Mix everything except the cornstarch in a pot over medium heat until the fruit is nicely cooked down. Add cornstarch and stir until thick. Remove from heat. Place in prepared pie crust and bake for 10 to 15 minutes in a preheated oven at 350 degrees F. Top with pumpkin seeds. Enjoy!
🗝️ Whole Wheat Crust
1 cup whole wheat flour
1 Tbs sugar (optional)
1 pinch of salt
¼ cup extra virgin olive oil
¼ cup cold water
Combine all ingredients and press into a pie pan. Poke holes in the bottom of the pan and bake at 350 degrees F for 10 minutes. Add filling (compote or fresh fruit) and bake another 10 to 15 minutes or until fully cooked.
