Ingredients
Marinate Mutton:
Mutton / मटन – 500 gram
Green Chilli / हरी मीरच – 2
Salt / नमक - 1 tsp
Turmeric powder/Haldi/हल्द - ¼ tsp
Lemon Juice/ नींबू का रस – 1 tsp
Ginger Garlic Paste / अदरक लहसुन का पेस्ट – 1 tsp
Curd/Dahi/दही – 150 gram
VJ’s mutton dum biryani masala - 1 tbsp
Red chilli powder/ लाल मीरच पाउडर – 1 tsp
Fried onion / तले हुए प्याज़ – 1 medium size
Coriander Leaves / Dhaniya / धनिया – 1 tbsp (Chopped)
For Cooking Biryani Rice:
Water / पानी – 3 Glasses
Salt / नमक - 1½ tsp
Star anise/ चक्र फूल – 1
Bay Leaf (dried) / Tej Patta / तेज पत्ता – 2
Cinnamon / Dalchini / दालचीनी - 2 inch
Cloves / Laung, lavang / लौंग – 8
Cardamom/ Elaichi / इलाइची – 2
Black pepper / काली मिर्च – ¼ tsp
Basmati rice / बासमती चावल - 500 grams
Purified butter/ Cow Ghee / घी – 2 tsp
Boiled Milk – 2 tsp
Turmeric powder/Haldi/हल्द – ½ tsp
For dry coconut and onion paste:
Dry coconut/Copra/सूखा नारियल – 50 gram
Refined oil / रिफाइंड तेल - 2 tbsp
Onion/ प्याज – 250 gram
Water / पानी – ½ cup
For Mutton Dum Biryani:
Refined oil / रिफाइंड तेल - 2 tbsp
Purified butter/ Cow Ghee / घी – 1 tbsp
Bay Leaf (dried) / Tej Patta / तेज पत्ता – 2
Cinnamon / Dalchini / दालचीनी - 2 inch
Star anise/ चक्र फूल – 1
Black pepper / काली मिर्च – ¼ tsp
Cardamom/ Elaichi / इलाइची - 1
Onion/ प्याज – 1 small chopped
Ginger Garlic Paste / अदरक लहसुन का पेस्ट – 2 tsp
Tomatoes / टमाटर – 75 gram
VJ’s mutton dum biryani masala - 40 gram
Byadgi Red chilli powder/ बयादगी लाल मीरच पाउडर – 1 tsp
Water / पानी – 1 Glasses
Salt / नमक - 1 tsp
For Garnishing:
Fried onion / तले हुए प्याज़ – 1 medium size
Coriander Leaves / Dhaniya / धनिया – 1 Small Bowl (Chopped)
Purified butter/ Cow Ghee / घी – 2 tsp
Note: You can use refined flour / Maida / मैदा (for Dum)
Steps/Process
1. Marinate 500g mutton with Green chilli 2 sliced, salt 1 tsp, Turmeric powder ¼ tsp, Lemon juice 1 tsp, ginger & garlic paste 1 tsp, 150g curd, VJ’s mutton dum biryani masala 1 tbsp, red chilli powder 1 tsp, fried onion (chopped) 1 medium size, 1 tbsp coriander leaves, mix well and keep it for 1 hour.
2. Take a vessel, 3 glasses of water, 1½ tsp salt, star anise 1, bay leaf 2, Cinnamon 2 inch, cloves 8, black pepper ¼ tsp, 2 Cardamom , 500g of basmati rice (washed and soaked for 30 min), ghee 2 tsp, mix well and cook for 10 min in medium flame.
3. Make a mix of 2 tsp boiled Milk and ½ tsp Turmeric powder and pour into cooked rice.
4. Take a pressure cooker, Add dry coconut 50g to pan and fry till get brown and take it on a bowl.
5. Heat 2 tbsp oil in pan, add sliced onion 250g and fry till get brown. Keep it for cool.
6. Now make fine paste of fried onion and coconut by adding ½ cup water.
7. Heat 2 tbsp oil in pressure cooker, add 1 tbsp ghee, Bay Leaf 2, Cinnamon 2 inch, 1 star anise, Black pepper ¼ tsp, 1 Cardamom, 1 small chopped onion, 2 tsp ginger & garlic paste and fry for 1 min.
8. Add 75g of chopped tomatoes and cook for 3 min. add onion and coconut paste, fry for 4-5 min till oil oozes out.
9. Add 40 gram of VJ’s mutton dum biryani masala, Byadgi mirchi powder 1 tsp, add marinated mutton, 1 glasses of water, Salt 1 tsp and pressure cook for 5 whistles.
10. Take a vessel, pour mutton gravy into the vessel, Add cooked rice, sprinkle chopped coriander leaves, fried onion and pour 2 tsp ghee over it.
11. Cover the lid and pack it with maida dough and keep it on the tawa for 10 min in low flame.
Note: 1 tbsp = 15 grams or 15 ml
Mutton dum biryani is goodness of rice and meat that comes in layers!
