harira is the traditional dish in Morocco during the month of Ramadan. It is a very rich soup.
Here is how to prepare a Moroccan harira soup with all the ingredients:
Coriander
Parsley
Celery
1 Large onion
200g Meat cut into small pieces
Olive oil
A teaspoon of Salt
A teaspoon of Paprika
1/2 teaspoon of pepper
1/2 teaspoon of Turmeric
1/4 teaspoon of cinnamon
1 teaspoon of Ginger
100G dry chickpeas soaked (8h in water)
100g of lentils soaked (8h in water)
A spoon of clarified butter (ghee) If available
4 tomatoes
2 teaspoons of tomato paste
3 large spoons of flour
some water
Vermicelli
a large spoon of parsley and cilantro
