Wagon Camping in the 1800s and Recipes from Lewis & Clark

I spent the the 4th of July holiday at Paluka Point in The Sam Houston National Forest, Texas, USA.  It was a great place to reenact wagon camping from the 1800s.  I was surprised to meet several YouTube subscribers, who filmed the "dream scene."

Put your baggage in the wagon and walk along side.  In the 1800s, this mode of travel was considered suitable for people of all ages, especially for women and children (John M. Gould, How to Camp Out, 1877).  You can bring your cast iron cookware.  It's OK to put your blanket roll in the chuck wagon.  Be considerate of the the horses.  You don't need to take ALL the  comforts of home!

The Paluka Point Campsite has a tremendous view of Lake Conroe, with a good swimming beach.  American Beautyberry plants (Callicarpa americana) are very common.  They repel mosquitoes and ticks as effectively as DEET.  Pioneers often crushed the leaves and put them next to their horses. See: http://www.sciencedaily.com/releases/...   This location also has more Passion Vine plants (Passifloraceae incarnate) than any other location I've seen in east Texas.  They have many medicinal qualities. The meals for this camping trip were adapted from The Food Journal of Lewis & Clark, recipes for an Expedition by Mary Gunderson, 2003.

CORN AND DRIED MEAT SOUP:  5  green onions,  1-1/2 cup parched sweet corn,  2-1/2 ounce chopped dried beef, 1 tsp sugar, 1 tsp salt, 1/2 tsp pepper, 2 tsp vegetable oil, 3 cups water.   Simmer for 30 minutes

CORN PUDDING: 3 cups condensed milk mixed with 1 cup water, 1/2 cup stone-ground cornmeal, 3 eggs, 1/4 cup molasses, 1/4 cup brown sugar, 1/2 tsp ground cinnamon, 1/2 tsp ground nutmeg, 1/2 tsp salt, 3 tbs butter.  Blend together 3 cups milk/water and cornmeal; bring to boil and stir until mixture thickens.  Beat in other ingredients.  Pour into Dutch Oven and pour remain cup of milk evenly over top.  Bake until mixture sets.

CORNMEAL MUSH WITH CHEESE:  1/2 cup stone-ground cornmeal, 1/2 tsp salt, 1/2 cup grated mild cheese, 1 tsb butter, 1 cups water.  Mix cornmeal, salt and water in pan over medium-high heat.  Bring to boil for 10 minutes, string constantly.  When thickened, stir in cheese and butter.  Serve immediately or fry in hot butter.
