Ingredients:
For the birria sauce
1 tsp oregano
1/2 tsp cumin seeds
1/2 tsp thyme
2/2 tsp peppercorn
1/4 tsp ground ginger
7 New Mexico Chile pods
2 Chile anchos
Chile arbol(optional I like to use 5)
5 garlic cloves
2 bay leaves
1/2 inch cinnamon stick
8 whole cloves
2 tbsp white distilled vinagre
3-4lbs Chuck roast
Salt I used 4 1/2 tsp
Black pepper I used 1 tbsp
1 roma tomato
2 bay leaves
Oil to sear
For the sandwich
Sourdough bread
Queso Oaxaca
Pepper jack cheese
Chopped onion
Chopped cilantro
